Cauliflower Grilled Cheese

With supervision, kids can help blend the cauliflower (press the pulse button and watch it happen).

Cook time: 20 minutes
Makes: 4 servings
Ingredients:

1 head cauliflower (to make about 4 cups or 1000 ml processed cauliflower)

2 eggs, lightly beaten

1 clove of garlic

1 tsp. (5 ml) Italian seasoning

1 ½ cups (375 ml) shredded white cheddar
How To:

Cut cauliflower into rough florets and process in a food processor or blender until the texture resembles rice.

In a medium bowl, combine the processed cauliflower, eggs, Italian seasoning, and garlic.

Heat a large nonstick skillet over medium heat. Spray with cooking spray and then scoop the cauliflower mixture into a small patty on one side of the pan. Repeat to form a second patty on the other side. Press down both patty’s with a spatula and allow to cook until golden brown (approx. 5 minutes). Flip.

Top one of the patty’s with the shredded white cheddar cheese and place the second patty on top. Cook until the cheese is melted (approximately 2 minutes more per side).
For Leftovers...
Crumble leftovers to use as a salad topping or combine with eggs to make a frittata!
