Cheesy Tomato Delights
Make it Fun!
Let kids help stuff the cheese into the tomatoes. Imagine that you’re filling a pirate’s treasure chests together!
Prep time: 10 minutes
Cook time: 20 minutes
Makes: 8 tomato halves
4 ripe but firm tomatoes
1/4 cup (60 ml) shredded mozzarella cheese
1/2 cup (125 ml) shredded cheddar cheese
1 tbsp. (15 ml) Italian seasoning
¼ cup chopped fresh basil
Cut tomatoes in half, crosswise and remove seeds. Place halves on a baking sheet lined with foil or parchment paper. Trim bottom of tomato if necessary to stand tomato straight up.
In a bowl, combine cheeses, Italian seasoning, basil, and a pinch of pepper (if desired). Distribute cheese mixture among tomato halves.
Bake in preheated 350°F (180°C) oven for about 20 minutes or until tomatoes are softened and cheese is light golden.
Extras can be chopped up into bite-sized pieces and used in salads, wraps, tacos, etc.
