Veggie Egg Muffins
Make it Fun!

Involve kids by letting them help crack the eggs. They may drop a shell or two the first time they try, but they will love the challenge!

Prep time: 5 minutes

Cook time: 15 minutes

Total time: 20 minutes

Makes: 12 muffins

  • 12 eggs

  • 2 cups spinach

  • ½ cup (125 ml) diced peppers

  • 1 chopped green onion

  • ½ cup (125 ml) shredded cheese

How To:
  1. Line muffin tin with muffin liners and spray with nonstick cooking spray.

  2. Break an egg into each of the 12 muffin cups.

  3. Add fresh spinach, peppers, and green onions to each of the cups.

  4. Top with shredded cheese. Sprinkle each egg with salt and pepper to taste.

  5. Bake for 15 minutes at 350°F (180°C) .

  6. Remove each muffin from the tin and allow to cool for 5 minutes before serving.
