Feta Chicken Salad
Make it Fun!

Kids love shapes! Cut the bread into different shapes with a cookie cutter.

Prep time: 10 minutes

Makes: 4 servings

  • 3 cups of diced or shredded cooked chicken

  • ¾ cup chickpea hummus

  • 2 large celery stalks, finely diced

  • 1 red bell pepper, seeded and diced

  • ½ red onion or shallot, diced

  • 4 oz (120 g) feta cheese, crumbled

How To:
  1. In a serving bowl, mix together the chicken, hummus, celery, bell pepper, red onion, and feta. Add salt and pepper to taste.

  2. Serve on whole-grain bread or use as filling for a lettuce boat or a pepper cup to add extra veggies to the meal.

For Leftovers... 

Save the leftover crust (from the shapes) to make breadcrumbs!
