Minty Watermelon and Cucumber Salad

Does anything scream “summer” more than sweet and juicy watermelon cubes? Watermelon is a staple in my house during the summer months. And the kids love it! It is the perfect snack, dessert, and picnic food. It is also a great addition to summer salads! Pair watermelon cubes with crisp cucumber, savory feta, and mint leaves for the perfect combination of fruits and vegetables! This is a crowd pleaser with adults and children alike. And with a little help from an adult, this salad can be almost exclusively prepared by your children!


Serve this salad alongside barbecue chicken, grilled corn and lemony orzo for a tasty summer meal to enjoy outside. Feel free to add basil, dill or any other herbs that your family enjoys. To add a nutty crunch, try using pistachios or walnuts. Then watch as your children gobble this salad down and ask for second helpings.


Minty Watermelon and Cucumber Salad

An easy and refreshing summer salad!

Serves: 6


Ingredients:

  • 4 cups seedless watermelon cubes

  • 1 large English cucumber or 6 mini cucumbers

  • ⅓ cup of feta, crumbled

  • Handful of mint leaves

  • 1 tbsp olive oil

  • 1 tbsp red wine vinegar

  • Pinch salt and pepper

Tools Required:

  • Cutting board

  • Age appropriate knives

Directions:

  1. Have your child rinse the mint and cucumber.

  2. Have an adult cut the watermelon into large chunks. Using age appropriate knives, children can cut the watermelon into small cubes and the cucumber into bite-sized pieces. Place in a large bowl. *If using an English cucumber, cut down the middle and remove the seeds first.

  3. Children can crumble the feta and tear the mint leaves. Add to the watermelon and cucumber. Gently toss the salad to combine.

  4. To make the dressing, mix together olive oil and red wine vinegar. Add a pinch of salt and pepper to taste. Pour over the salad.

  5. Mix and serve! This salad is best enjoyed within 1-2 hours of preparing.
