Rainbow Fritters

Prep time: 10 minutes

Cooking time: 8 minutes

Makes: 10 fritters

Ingredients:
  • 1 medium zucchini (1 cup grated)

  • 1 small carrot (1/2 cup grated)

  • 1/2 red pepper, finely diced (1/2 cup)

  • 1/2 cup corn

  • 1/2 cup grated parmesan cheese

  • 1 tbsp chopped parsley 

  • 2 eggs

  • 1/4 cup flour

  • 1 tbsp olive oil

How To:
  1. Place the grated zucchini in a bowl lined with paper towel or a clean dish towel. Sprinkle with a pinch of salt. 

  2. Place the grated carrot, parmesan cheese, parsley and corn into a bowl. 

  3. Have your child squeeze as much liquid as possible out of the zucchini and add to the bowl with the rest of the ingredients. 

  4. Add the eggs and have your child stir the mixture. Add the flour and stir until combined. 

  5. Heat a frying pan on medium heat and add the olive oil to the pan. 

  6. Spoon approximately 2 tablespoons of the mixture into the frying pan and flatten with a fork. 

  7. Fry for approximately 3-4 minutes on each side until browned and cooked through.

  8. Enjoy for lunch with some chicken noodle soup. 

  9. Leftovers will keep in an airtight container for 2-3 days. 

Make it Fun!

Let your child choose which vegetables and cheese to add to the rainbow fritters. Other great choices might include sweet potato, broccoli, cauliflower, cheddar cheese or goat cheese! 

For Leftovers... 

Wrap in parchment paper and freeze for a quick snack!
