Make it Fun!
Kids can help use the almighty potato-masher in prepping the mashed sweet potatoes. It’s safe to lick the masher clean because the sweet potato mash is already cooked!

Makes: 12 servings
½ cup (125 ml) smooth nut butter of choice (cashew, almond, sunflower)
2 tbsp. (30 ml) maple syrup
1 cup (250 ml) mashed cooked sweet potato
¼ cup (60 ml) cocoa powder
1 tsp. (5 ml) vanilla
2 tsp. (10 ml) cinnamon
In a small microwave-safe bowl or on stovetop, melt nut butter with maple syrup.
In a large bowl, combine the mashed sweet potato, nut butter mixture, cocoa powder, vanilla, and cinnamon. Mix very well.
Pour the mixture into a small, greased loaf pan and bake at 350 °F (180°C) for around 20 minutes or until cooked through. Remove from the oven and allow to cool completely before slicing into pieces.
Chop or crumble these brownies into small pieces and use as a topping for plain yogurt. Fresh fruit mixes well with this dish too!
