Vegetable & Fruit Popsicles

Prep time: 5 - 10 minutes

Makes: ~6 servings

Ingredients:

Strawberry Beet Popsicles

  • 1 1/2 cup strawberries (fresh or frozen)

  • 1/2 cup beets (cooked and cooled)

  • 3/4 cup apple juice

  • 1 tsp lemon juice or balsamic vinegar

Mango Orange Carrot Popsicles

  • 1 1/2 cup diced mango (fresh or frozen)

  • 1/2 cup orange juice

  • 1/2 cup carrot juice

Creamy Lime Popsicles

  • 1 1/2 cups pineapple (fresh or frozen)

  • 1/2 banana 

  • 3/4 cup coconut milk

  • 1/2 to 1 cup spinach

  • Zest and juice of 1 lime

How To:
  1. Puree all ingredients in a blender until smooth. 

  2. Pour the mixture into a popsicle mold. 

  3. Freeze for 3-4 hours or until completely firm. 

  4. Enjoy on a hot summer's day. 

Make it Fun!

Experiment with different flavours using different combinations of fruits and vegetables. Get your child involved by letting them pick the flavours. Use funky shaped popsicle molds! 

For Leftovers... 

Add to water (flat or sparkling) for a cool summer treat!
