Veggie Breakfast Burritos

Make it Fun!

Involve kids by letting them help crack the eggs. They may drop a shell or two the first time they try, but they will love the challenge!

Prep time: 5 minutes

Cook time: 10 minutes

Total time: 15 minutes

Makes: 2 servings

  • 2 eggs

  • 1 tbsp. (15 ml) canola oil

  • 2 green onions

  • ½ cup (125 ml) peppers

  • ½ cup (125 ml) tomatoes

  • ¼ cup (60 ml) cheese

  • 2 whole wheat tortillas

How To:
  1. Scramble eggs in a small bowl with wire whisk or fork. Add 1 tablespoon of water.

  2. Add canola oil to skillet and heat on medium heat. Cook vegetables until soft. About 4 minutes.

  3. Add eggs into skillet and stir until they are set.

  4. Remove egg and vegetable mixture from skillet and divide evenly between tortillas.

  5. Top with cheese, then roll.

For Leftovers... 

Freeze leftover burritos for an easy grab’n’go breakfast on a busy morning!
