Veggie Breakfast Burritos

Involve kids by letting them help crack the eggs. They may drop a shell or two the first time they try, but they will love the challenge!

Prep time: 5 minutes
Cook time: 10 minutes
Total time: 15 minutes
Makes: 2 servings
Ingredients:
-
2 eggs
-
1 tbsp. (15 ml) canola oil
-
2 green onions
-
½ cup (125 ml) peppers
-
½ cup (125 ml) tomatoes
-
¼ cup (60 ml) cheese
-
2 whole wheat tortillas
How To:

Scramble eggs in a small bowl with wire whisk or fork. Add 1 tablespoon of water.

Add canola oil to skillet and heat on medium heat. Cook vegetables until soft. About 4 minutes.

Add eggs into skillet and stir until they are set.

Remove egg and vegetable mixture from skillet and divide evenly between tortillas.

Top with cheese, then roll.
